Easy Strawberry Mini Pudding Pops

Although our summer has officially ended with the kids going back to school this week, we aren’t stopping the fun until the weather in Texas tells us to. We’re still enjoying bike rides, playing in the sprinklers and Easy Strawberry Mini Pudding Pops.

Just because summer is over doesn't mean you still can't enjoy these Easy Strawberry Mini Pudding Pops.

It’s recipes like this one where I like to get the kids involved in the kitchen. I want all of my children to know their way around the kitchen and to be independent as they get older. Plus, when my children help me in the kitchen, they’re always more likely to eat what they’ve helped to create.

Easy Strawberry Mini Pudding Pops

Easy Strawberry Mini Pudding Pops

Serves: 20
Ingredients
  • 2-1/2 cups whole milk
  • 1 large box vanilla instant pudding mix
  • 1 pound frozen strawberries, thawed
Instructions
  1. Line a 24 cup mini cupcake pan with 20 – 3 oz sized paper cups; set aside.
  2. In a blender, blend the milk and pudding mix on low for one minute. Add strawberries and blend on medium speed for 30 seconds.
  3. Fill the mini cups with the pudding mix and freeze for one hour. Press a popsicle stick into each pudding cup and continue freezing for at least one more hour.
  4. When ready to eat, simply tear the paper cup off the pudding pop and enjoy!
