The perfect serving suggestion: freshly baked focaccia bread topped with fresh mozzarella cheese, tomato slices and this homemade sweet basil pesto.

It's the perfect choice for one of my favorite lunches ... focaccia bread topped with fresh mozzarella cheese, tomato slices and a homemade sweet basil pesto.

I don’t always have to prepare an extravagant lunch, but when I make this Baked Focaccia with mozzarella, tomatoes, and sweet basil pesto, it sure tastes like I did. Serve alongside a hot soup of your choice and you have a lunch that’s not only easy, but a delight for your taste buds.

If you’re looking for ways to get the kids in the kitchen to help you, this is one of those times that it’s easy enough that they can offer a helping hand. Allow them to measure out the ingredients and place them in the food processor. I’m learning I should have started when my children were much younger, but starting anytime is better than not starting at all!

  22. Lorraine says:

Can you leave out the pine nuts if one is allergic to them? Or what could be substituted (peanut/tree nut allergy)

  23. Crystal says:

Hi Lorraine, Are sunflower seeds considered a tree nut? I was going to recommend almonds but I believe they are tree nuts. Or pumpkin seeds. Those would probably be good. I’ve never tried any of these, but I don’t see why they couldn’t work as a substitute.
